Candied Sweet Potatoes

(Serves 12)

6 medium sweet potatoes
3/4 cup brown sugar
4 Tbsp. butter
3 Tbsp. cream
¼ tsp. salt
mini marshmallows

1.  Boil potatoes whole with skin left on for 30-45 minutes or until tender.
2.  Let cool, and slip off skins.
3.  Cut up, and place in baking dish.
4.  Melt butter in saucepan.
5.  Add brown sugar, cream, and salt.
6.  Heat until sugar dissolves.
7.  Pour over potatoes.

Bake @ 425°F for 30 minutes or until bubbly.  Put desired amount of marshmallows on top, and let them melt.
